Cycling through Polignano a Mare you will reach Conversano. The heart of the city is made up of three urban centres, each characteristic and to be explored slowly on foot. In Corso Domenico Morea the wind mercilessly sweeps the buildings, caressing them with intense force. The view from this hill today is excellent, with the sea not far away and the green countryside opening up all around. A strategic lookout point, very important in antiquity, especially from the Torre Maggiore of the Aragonese Castle of Conversano. Flowers everywhere, stone and small alleys that open onto decorated balconies surround Santa Maria Assunta. The image of the Madonna della Fonte, beloved patroness of the city, is also very intense. Together with the wooden Crucifix on the altar, from the 15th century, it is the only piece saved from the fire that devastated the Basilica in 1911. A direct link with the past, worth seeing in Conversano. Among alleys and slopes, tunnels and covered passages, walking in Conversano becomes a pictorial journey. You have the constant impression of being in a film, protagonist of idyllic scenes of rural daily life. Conversano is a wonderful city of art, its refinement and its soul are those of a village. Visiting the surroundings of Bari often gives this magnetic impression. After visiting the Castle, you will cycle in the direction of Monopoli.

Meeting with your guide in the lobby of your hotel in Monopoli. Along rural roads of the Adriatic coast, which run alongside the most beautiful Apulian beaches and expanses of thousand-year-old olive trees, you will be able to observe the places we love and live in every day. You will reach a splendid Masseria a few km from Monopoli. In the strip of land on the border between the provinces of Bari and Brindisi, the green of the olive trees interrupts to reveal a treasure of Puglia, a village of peasant life, in symbiosis with nature and respecting traditions. Starting from the 16th century, the territory between Fasano, Monopoli and Ostuni welcomed numerous farm buildings, characteristic defensive and agricultural defense structures of the countryside, around which the economic and social life of the time took place. Today you will witness the production of mozzarella and burrata. Afterwards, you will taste fresh and mature cheeses accompanied by homemade taralli, locally produced olive oil with water.

We will continue in the direction of Ostuni.

At first you will have the impression of being in Greece, but we are still within the Italian borders: we are talking about the “White Lady”, the village of Ostuni. This city was built on three hills and is famous for the beautiful effect of the almost blinding sunlight reflecting off the walls of its whitewashed houses. You will walk through the narrow streets. We will also be able to enjoy a breathtaking view of the Adriatic coast from which Ostuni is separated by an ocean of centuries-old olive trees. Before starting our walk in the historic center, we stop along the ancient walls to take a panoramic photo. You will then walk along the defense walls that lead to the historic center of the city. We will reach “Piazza della Libertà” where we find the town hall and the column dedicated to Sant’Oronzo. Subsequently we will head towards the medieval part of the city through narrow, whitewashed alleys to then reach and visit the Cathedral of the Assumption in Romanesque-Gothic style (1435). Next, you will cycle towards Locorotondo.

Locorotondo, among the most beautiful villages in Italy, is the community of the Itria Valley that has remained most linked to traditions and that has best known how to preserve the authenticity of native arts and crafts including stone working. The name suggests the circular shape of the historic center which is clearly visible coming from Martina Franca. The town crowns the hill with its row of compact houses with cummerse roofs, i.e. sharp roofs covered with limestone chiancarelle. The ancient heart of the town is a truly unique place capable of exerting uncommon suggestions and charm. From its viewpoint you can admire an exciting area: a mosaic of small vineyards marked by dry stone walls, patches of Mediterranean forest and silvery olive groves surrounding ancient farms, thousands of trulli scattered in the districts.

You will end your day sitting on a natural terrace in Locorotondo, tasting a glass of wine and Apulian taralli while contemplating the green of the olive trees that mix with the pink of the Apulian sunset.

Afterwards, return to the hotel in Ostuni.
